Vinification Soft pressing after destemmingand pumping over, vinificationwith maceration on the skins, fermentation for 18 days at the controlled temperature; mainly in stainless steel to be briefly put in oak
Aging In oak barrels for about 12 months
Maturation For 10 months in a bottle
Characteristics Ruby red with purple reflections, soft bouquet of matured fruit and cherry and plum with spicy notes of vanilla, tobacco, leather and cocoa. Excellent acidity and persistence in the mouth, medium-bodied; great elegance, soft and enveloping tannins.
Temperature Serve at about 18/20 degrees.
Best served with Red meat dishes, roasted meat, braised meat, grilled meat, first courses, matured cheeses.
